What do you serve for a big brunch or a special breakfast?
With Easter coming up, I have started brainstorming some brunch ideas I can serve that day. Our family loves brunch and I especially love cooking different recipes that are catered more to a brunch menu.
This Southwest Breakfast Hash is a very easy recipe that is hearty and a good start to base the rest of my menu around.
Southwest Breakfast Hash
- 1 can HORMEL® MARY KITCHEN® Hash (Homestyle)
- 1 small onion (chopped)
- 1 small green pepper (chopped)
- 1/2 lb. breakfast sausage
- 1 c. shredded cheddar cheese (or any cheese you love)
- Salt and pepper
- 5 eggs (more or less depending on how many you are serving)
- Preheat oven to 350°.
- Cook the sausage in a skillet over medium heat. (If you have links like I did, just cut the casing to get the sausage meat out and discard the casing.)
- Chop the onion and green pepper into small pieces and cook in a skillet over medium heat until softened and translucent. I add salt and pepper to the onion and pepper to season them.
- Once the sausage is cooked, drain it and add it to the onion and green pepper.
- Then, add the HORMEL® MARY KITCHEN® Hash (Homestyle) and cook in the skillet for about 8-10 minutes.
- Sprinkle the cheddar cheese over the hash mixture and bake in the oven for 15-20 minutes.
- When the Southwest Breakfast Hash only has a few minutes left to cook, start making your eggs. This time, I made over-easy eggs to put on top of the hash. I think this would also be great with scrambled eggs mixed inside the hash. It all depends on how you like your eggs.
- Once the hash comes out of the oven, place your eggs on top.
Again, I love using my cast iron skillet for recipes like this because I can just set it on the table and guests can serve themselves from the skillet.
The HORMEL® MARY KITCHEN® Hash is flavorful, hearty and convenient for any brunch occasion. I found it easily in the canned meat aisle at Walmart.
