Wayfair announced that they were going to do a “Battle of the Pies” Bake Off, and they asked us to submit a pie recipe.
I was beyond excited!
Who doesn’t love a pie challenge?
I am a pretty competitve person and let’s be honest my family would starve if I didn’t enjoy cooking. Okay, they probably wouldn’t starve, they are not helpless but it defintely feels that way sometimes!
To be fair I am a creative and the kitchen is defintely a good place to get creative so I enjoy the challenge and I love a good meal.
Raising my kids and running a day care from my home has also taught me a few things.
A few secrets I will share with you today and hopefully you will not look down on me for them.
Anyways, back to the Battle Of The Pies.
(I just love the sound of that)
Have you ever heard of the Battle Of The Pies – Wayfair Pie Bake Off?
Here is how it works:
Everyone submits a pie. Once all the pies have been submitted they choose 40 of the pie submissions to be entered into the battle.
After all 40 of the pies have been selected we move on to part 2.
I thought about sending over one of my favorite fruit pie recipes at first.
However, after I thought about it. I realized there is going to be a ton of sweet pies.
I wanted to do something different! Therefore, I decided to do a savory pie.
What is better than chicken pot pie? NOTHING.
So that is what I did, I submitted my Easy Chicken Pot Pie Recipe.
It was the right choice! I submitted my recipe and they picked my pie recipe for the battle. 🙂
I felt like I had already won, just because my pie recipe was selected for the battle.
But that was just the beginning, there was a part 2 to this battle.
Part 2 was to have everyone vote on the best pie recipe.
All 40 pie recipes that were choosen have been listed and whoever gets the most votes on their pie wins!

Now that you know how the battle works, I want to share my recipe with you!
Don’t forget I also said I was going to share a few secrets so brace yourself.
Now let me show you my Easy Chicken Pot Pie Recipe.
I choose to submit my Easy Chicken Pot Pie Recipe because this pie brings up great memories for me. Back when I was growing up, my grandparents would have it once a week at their house. I loved visiting them and smelling the fresh pie and seeing them sit there with their tv trays enjoying the fresh pie. I sure would love to stop over to their house just one more time and enjoy chicken pot pie with them now.
Now keep in mind, everyone does their chicken pot pie a litte different. That is why I think this is such a great recipe to share because you can change up the ingredients to fit your needs / the needs of your family and friends.

Easy Chicken Pot Pie
This recipe is really very easy to make. I have also found a few ways to make it even easier over the years!
CUE MY SECRET:
I use store-bought pie crusts and a rotisserie chicken to make it even easier. Judge me if you feel it necessary but you have to be open to new possibilities sometimes.
Here is a list of the ingredients that I used.
You can add or subtract anything that you don’t think your family would enjoy. Also, if you are not a fan of rotisserie chicken feel free to use your families favorite chicken. Homemade pie crust is always a favorite too!
Ingredients:
- 1 small potato (peeled and diced )
- 1 carrot (sliced )
- 1/2 c. butter
- 1/2 mall onion (diced)
- 1/4 tsp. sage
- 1/4 tsp. poultry seasoning
- 1/3 c. flour
- 1 1/2 c. chicken broth
- 1 c. milk
- 3 c. diced cooked chicken ((I use a rotisserie chicken))
- Handful of frozen peas
- 2 Store-bought pie crusts
- Salt and pepper to taste
Here are the instructions on how I made this easy chicken pot pie.
Instructions:

Start by preheatting the oven to 425°.

Then boil the diced potato and carrot in water on the stove to soften them.

Drain the water from the pan.
-
After that, melt the butter in a large sauté pan.

Then, add the onions to the pan and sauté until they are translucent.

Add the salt, pepper, sage and poultry seasoning to the pan and then stir it all together.

Sprinkle flour on top of the onion mixture and let it cook for 1 minute; stirring constantly to evenly cook the flour.

Gradually whisk in the chicken broth and milk.

Add the cooked potatoes and carrots and let it all simmer for a few minutes to thicken.

Then, stir in the chicken and peas.

Finally, turn the heat off and let it sit.

Next, put one of the pie crusts in the bottom of a deep dish pie plate.

After that, pour the chicken filling into the pie shell.

Then, place the second pie crust on top and press the crust edges together to seal.

Gently brush the egg wash on top of the pot pie and use a knife to cut a few slits in the top of the pie to let the steam escape.

Next, place the pie on a baking sheet and put in the oven for 30 minutes.

Finally, remove it from the over and let it sit for about ten minutes.

After ten minutes you can cut the pie. The pieces come out better after it sits a little bit.
This Easy Chicken Pot Pie Recipe is definitely a comfort meal for my family.
However, If you are looking for something to serve with the pie I would suggest a simple salad.

I wanted to find something to show off the ‘fall’ vibe I was going for. This blanket was sitting in the living room and it looked like the perfect solution.
It was the perfect “tablecloth” for this meal.
Nothing says fall like a plaid blanket and warm Chicken Pot Pie. Right?
Is Chicken Pot Pie a popular dish in your home?
Since I grew up with chicken pot pie being a familiar staple in our home, I use to feel like it was cheating to use pre-made crust and rotisserie chicken but as I got older I realized that there was nothing wrong with taking shortcuts sometimes.
My kids prefer rotisserie chicken over just shredded chicken.
Also pre-made pie crusts don’t always hold up as well.
