This Roasted Red Pepper And Pesto Grilled Cheese With Chicken is one of our favorite easy camping dinners. It can be made in minutes and only takes a few minutes on the grill to warm it up. I love cooking outside during the warmer months and eating al fresco. There is nothing better. I hope this recipe inspires you to bring dinner or lunch outside the next time you sit down for a meal.
Ingredients For Roasted Red Pepper, Pesto & Chicken Grilled Cheese:
1 jar roasted red peppers
1 c. Greek yogurt
3 T. jarred prepared pesto
1/2 lemon
6 Ciabatta rolls
Fresh mozzarella
Basil leaves
Chicken (I used deli chicken from the cheese aisle, but you can use left over chicken, a rotisserie chicken or leave the chicken out all together)
The first thing to do is make the “pesto aioli” (that is the chef term I came up with for the spread I made for this sandwich). 🙂
Mix together the Greek yogurt with the pesto and the juice from 1/2 of a lemon. You can add more pesto or use less. You can’t mess this recipe up. Just use measurements to your liking.
Now, it is time to build the Roasted Red Pepper And Pesto Grilled Cheese With Chicken!
Spread the pesto aioli on each side of the ciabatta roll. Then, add basil leaves to one side.
After that, drain the roasted bell peppers and cut them up so they fit well on the roll. Add your desired amount to the top of the basil.
Last, add a layer of mozzarella and chicken.
Put the two pieces of ciabatta sides together and it is ready for the grill.

Cooking in the spring and summer means you can have all the mess outside. Your kitchen stays clean and you don’t have to worry about cleaning it after the meal is over.
We scored an tabletop iron grill at a yard sale from a little, old lady and we couldn’t wait to put in on our picnic table and cook on it.
All we had to do was clean it up and it was ready to go. For this grilled cheese sandwich, we added charcoal to the bottom of the grill and I used my ElectroLight to light the charcoal. It took no time at all.
The ElectroLight makes it super simple for me to start a fire any time. Heating charcoal takes minutes with this must-have summer gadget and we were able to cook the sandwiches in no time.
When I cook sandwiches on the grill, I always use a brick wrapped in aluminum foil. The weight of the brick pushes the sandwiches down and makes them like a Panini which is easier to eat.
When I make sandwiches like this outside, I cut them up and everyone can grab one easily and go.
I like to make it simple and easy when we eat this way. Pair this sandwich with some berries and lemonade and we are good to go.
Easy camping dinners in the summer on our picnic table next to the fire pit is something we look forward to all summer long. Smores will always likely be the dessert every night and I am not mad about it.
