Yummy Chocolate Banana Bread!!!

Gabrielle and I have been slowly making our way through the Magnolia Table Cookbook and having a lot of fun putting our own twists on different recipes in the cookbook. This Chocolate Banana Bread Recipe is something we have been making for a long time. Being a frugal mom, I have the hardest time throwing away food.

Bananas are so hard because we only like to eat them at a certain point and after that, they go to waste. So, ever since I can remember, I have always made banana bread or banana muffins to freeze so that I wouldn’t have to throw out the over ripe bananas.

Ingredients For Chocolate Banana Bread:

8 T. butter

1 c. brown sugar

2 eggs

2 tsp. vanilla

5 ripe bananas

1 3.4 c. flour

1 tsp. baking soda

1.2 tsp. salt

4 T cane sugar or granulated sugar

1/3 c. oatmeal + 3 T

1/3 c. chocolate chips (or more if you want it more chocolatey)

Directions For Chocolate Banana Bread:

Preheat the oven to 350°. Spray a loaf pan, pie plate or square cake pan with non-stick spray. Mix the first five ingredients together in a bowl. Mix in the bananas. Next, add in the flour, salt and baking soda. Then, mix in the oatmeal and chocolate chips. (You can mix dry and wet in different bowls, but I have never found it to make a difference so I do it all in one bowl to make less mess to pick up when it is all done.)

Pour the mixture into the prepared pan and sprinkle the top with the 4 T of sugar and 3 T of oatmeal. This topping makes it a little crunchy on the top. Bake it for 45-50 minutes or until a toothpick inserted in the middle comes out clean. 

We have always loved adding oatmeal and chocolate chips to banana bread.

I loved that Joanna said that she liked to bake banana bread in a cake pan because it cooks more consistent. I was getting ready to get my square cake pan out for this recipe, but somehow it has gone missing. So, I decided that I would make it in my large pie pan. I am so glad I did! I won’t make it any other way. The missing pan is a funny story because whenever my mom has something missing from her kitchen, she always thinks I borrowed it and just decided to keep it.

I have never been caught doing this because every time she ends up finding said missing piece somewhere she forgot she put it. So, when I couldn’t find my square pan, you better believe I called my mom to tell her to return it. 🙂 She didn’t have it but it is now a fun banter between her and I that I treasure.
