I am on a roll with summer recipes! I like switching things up a little bit and adding recipes to the blog. Taking food pictures is fun and it is nice to break up project posts with something else I like to do; cook and bake. Recipes that are simple and that use every day ingredients are my favorite. I don’t have time to slave in a hot kitchen all day so when I get a good recipe that doesn’t require that, I like to share it. Summer fruit is in abundance and at a great price right now, so I use it as much as I can. The kids have it for snacks and lunches and I like to add it to different recipes. This easy Blueberry Cobbler is the last thing I made.
I LOVE blueberries. My daughter and I can eat an entire carton in one sitting. (Not that we have ever done that before 😉 ).
This rustic blueberry cobbler is so easy to make and you only have to dirty one bowl and your cast iron skillet (maybe a measuring cup or two). My favorite thing about this recipe is serving it right out of the cast iron at the table. It makes it rustic and more fun that way.
Easy Blueberry Cobbler
- 1/4 c. butter
- 1/4 c. vegetable oil
- 1 c. flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. milk
- 1/3 c. honey
- 2 tsp. vanilla extract
- 3 c. fresh blueberries

Preheat the oven to 350°.

Put the butter and the oil in your cast iron skillet (I used an 11.5″ skillet).

Put the skillet in the oven as it is preheating so the butter melts.

Meanwhile, mix the flour, baking powder and salt in a bowl.

Add the milk, honey and vanilla.

Once the butter has melted, remove the skillet from the oven and pour the melted butter and oil into the flour mixture. Mix together.

Return the batter to the skillet and sprinkle with the blueberries.

Bake until golden brown (about 30-35 minutes).
I usually cut it into pie slices and sprinkle it with powdered sugar, but it is best served warm with vanilla ice cream on top.
