Peanut butter bread is all the rage right now, so I had to give it a try. This Easy Peanut Butter Bread With Chocolate Chips is our version of the recipe.
I wanted to make this recipe with ingredients we had on hand. Since we are in the middle of the Corona pandemic, I am trying not to go to the store unless I really have to. The great thing about not going to the store all the time is that we are getting creative and using what we have in the kitchen before buying more. Not only is it making cooking and baking more fun, but we have saved a lot of money not going to the store as much as we normally do. I am always trying to find the positives in this crazy time we are in.
The peanut butter bread recipes I have seen have not had chocolate chips in it, but Matt and the kids love the chocolate chip bread we get from Aldi, so I decided to add some mini chocolate chips to our recipe.
This recipe was popular back in the 40’s.
I love any recipe that calls for ingredients I will always have on hand. Sometimes, when a recipe calls for things I don’t always have, I won’t make it because I don’t want to have to buy a special ingredient that I will use for one recipe and eventually throw out because I didn’t use it again.
I never thought to make a peanut butter bread, but we like the 5 Ingredient Protein Balls so I thought this would be a hit too.
While it was baking, it made the entire house smell like warm cookies. The kids were playing outside and when they came in, they both said the house smelled so good.
The kids loved the bread.
They said it was something different and they will always remember making this during the Corona virus. 🙂
We tried it plain, with a drizzle of honey and with butter. We liked it all three ways.
Easy Peanut Butter Bread With Chocolate Chips
A quick homemade loaf of peanut butter bread with mini chocolate chips!12
- 1 cup half and half (any milk is okay)
- 2 eggs
- 2/3 cup granulated sugar
- 1cup peanut butter (plus an extra spoonful for good measure!)
- 1 tsp salt
- 1 tbsp baking powder
- 1-3/4 cup all-purpose flour
- 1/2 cup mini chocolate chips
- In a large bowl, mix the half and half, eggs, sugar, peanut butter and salt with a hand mixer. Then, add the baking powder and flour. Mix until incorporated. Mix in the chocolate chips.
- Spray a loaf pan with non-stick cooking spray and pour batter inside.
- Bake at 350º for about 45-60 minutes or until a toothpick inserted comes out clean.
