Irresistible Rhubarb Crisp Recipe

Ingredients:

Filling

  • 2 pounds chopped fresh rhubarb
  • ¼ cup cornstarch
  • ¾ cup sugar
  • 2 teaspoons ground cinnamon (or more if you like it)

Topping

  • 1 cup oats
  • ½ cup flour
  • ½ cup sugar
  • 2 teaspoons ground cinnamon
  • pinch salt
  • 1 stick cold butter cubed 

 

Instructions

Filling:

Mix all of the ingredients together in a bowl and then layer in the bottom of a buttered 8×11 (2-quart) baking dish.

Topping:

Mix all of the ingredients together in a bowl and use a fro or your hands to crumble the butter into the other ingredients. It is going to look crumbly and that is what you want. 

Once it is mixed, pour it evenly over the layer of the filling. 

Bake uncovered at 400° for 35 minutes. 

Let it sit for 10-15 minutes before serving. It will hold together better that way.
