I am all about easy meals. If it is breakfast, lunch, dinner or snack, I think that getting food on the table easily makes for a better experience all around. Any time that I can make something ahead of time, I do. Our schedule is just as full as everyone else’s so I try to plan ahead and prep what I can to make the meal come together even faster. This Overnight French Toast Casserole is a great plan ahead meal that you can use for your family or to feed a crowd if you are having company over.

Gabrielle and I are still working our way through the Magnolia Table Cookbook. Each recipe we have tried so far has been good, but we have always put our own twist on the recipes but either we don’t have every ingredient on hand or we just like to add certain things to certain foods. For this Overnight French Toast Casserole, cinnamon was our addition among some other things we changed. Whenever I make French toast, I always add cinnamon to the egg batter before I dunk the bread. I have always done it that way so we had to add it to this recipe.

Ingredients For Overnight French Toast Casserole:
1 stick butter
1 loaf French bread
10 eggs
2 c. heavy cream
1 c. almond milk
1.2 c. sugar
2 tsp. vanilla
1 c. brown sugar
1/2. c flour
Pinch of salt
3 T. cinnamon (more or less depending on how you like it)
powdered sugar to dust the top of the casserole
Maple syrup
Directions For Overnight French Toast Casserole:
Grease a 9 x 13″ baking dish. Cut the loaf of bread into 1″ slices and place the slices in the prepared dish, overlapping the slices. (If I were to do it again, I think I would cut the loaf into 1″ chunk pieces).
In a bowl, whisk the eggs, cream, milk, sugar, cinnamon and vanilla together. Pour this mixture over the bread slices, cover the dish and refrigerate over night.
The next morning, preheat the oven to 375°. Take the dish out of the fridge and let it rest on the counter while you make the topping. Mix the brown sugar, flour and salt in a bowl. (Add more cinnamon if you like). Cut the stick of cold butter into small pieces and put in the bowl. Mix the butter with the other ingredients until it makes a crumbly texture. Sprinkle this mixture all over the top of the soaked bread.
Bake uncovered until browned but the inside is soft, yet set (about 40 minutes). Cool slightly.
Sprinkle powdered sugar all over the top of the casserole and serve with maple syrup.
My family loved this casserole. I loved that I could make it ahead of time and still had something special for them to eat the next morning. This is great for weekends when you have a little more time in the morning to bake. The kids first tried the casserole with just the powdered sugar on top. They loved it, but they said they liked it even more with the syrup drizzled on top.
