What does brunch mean to you?
Brunch is such a fun meal to eat and an even better meal to serve. Sometimes it revolves more around breakfast and other times I incorporate more lunch items to the menu. Around the holidays when things are a little more hectic, brunch is a great way to get the family together. I am an early riser and love to get a lot of things done early in the morning. Around the holidays, when I can sneak out early and get some shopping done without the rest of the family in toe, I take advantage. My mom and sister are the same way so if we can get together and tackle a few presents and errands together, it is a lot of fun. Serving brunch on these days is a great way to gather everyone together for a break to refuel and finish out the rest of the day.
I have many favorite brunch recipes and one staple I always have in my kitchen to help make those recipes is Aunt Jemima products.
Aunt Jemima was in my grandmother’s kitchen and my mom always had it in hers. I am happy to say, it is now a staple in my own kitchen.
You can easily find the Aunt Jemimia products in the pancake aisle at Walmart.
I use the pancake mix for so many recipes, but for this brunch menu, I am going to share a Pumpkin Cinnamon Pancake recipe.
Pumpkin Pancakes
- 2 c. Aunt Jemima Buttermilk Complete Mix
- 1 1/2 c. milk
- 1 c. canned pumpkin
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- Aunt Jemima Original Syrup
- Your favorite nuts for topping (optional)
- Mix all the ingredients together until they are well incorporated.
- Ladle the pancake mix on your skillet and cook until brown, then flip.
- Enjoy some yummy pancakes.
I made this table setting simple. Different family members had to come at different times so I wanted it to be able to accommodate everyone.
I used a lighted birch tree as the centerpiece and scattered wood pieces around it.
The menu included the Pumpkin Cinnamon Pancakes, an egg casserole, blueberry muffins, croissants, fresh fruit and bacon.
These Pumpkin Cinnamon Pancakes are AMAZING! You can serve them any time of the year, but around the holidays, they are extra special. Our favorite way to eat them is with chopped pecans and Aunt Jemima Original Syrup. YUM!

That is the recipe I used. You can add the egg for sure. I am sure it would be amazing!
