Shredded Chicken Sandwiches

2 Mins read

If you like food with a little heat and a little sweet, then these Sweet Heat Shredded Chicken Sandwiches are for you. During the summer, we like to grill, but I also use my slow cooker when we have people over because I don’t want to stand at a hot grill all night. The best way for me to entertain is when I can get everything done and prepared before guests arrive and then all I have to do is set everything up “buffet-style” and the guests can help themselves to what they want, when they want.

Matt loves things spicy and my son is starting to like buffalo sauce on chicken and wings. When I was thinking about making Pulled Chicken Sandwiches, I tried to come up with something that wouldn’t be too spicy for our guests or our son, but something Matt would like too. The easy Sweet Heat Pulled Chicken Sandwich is what came about with only five ingredients!

  • 1/2 c. vinegar

  • 1/2 c. honey

  • 1/2 c. mild chili pepper sauce

  • 1/2 c. mild buffalo sauce

  • 2 rotisserie chickens

  1. First, pull all the meat from the rotisserie chickens and put it a slow cooker.

  2. Then, mix the other ingredients together in a saucepan.

  3. Cook on medium heat until it bubbles and thickens a little bit (about 10 minutes).

  4. Pour the sauce mixture over the chicken in the slow cooker and stir to coat.

  5. Cook on low/warm for 4 hours. The longer the chicken cooks in the slow cooker, the less spicy they will be.

(I was making this for a crowd so you can cut the recipe in half if you don’t need as much.)

I served these sandwiches with a coleslaw-type salad (which was good on top of the chicken – in the sandwich). We also had single-size bags of chips and iced tea. Easy peasy!!!

These sandwiches can be messy so you need to have Viva Towels on hand. To be honest, eight times out of ten, I hand out Viva Towels as napkins when we entertain any way. All Viva Towels are strong and durable like cloth and I don’t want to iron cloth napkins every time we entertain. Viva Towels wipe tough messes off hands and faces with both a strength and a smooth texture.

I had both kinds of Viva towels out during this party. One for hands and faces and one for spills and messes.
